At Frungillo Hospitality Group, giving back to the community is something we truly value — and this weekend, our own Chef David Morales had the honor of doing just that.

Chef David cooked for a special fundraiser benefiting the Mercy Center in Asbury Park. The Mercy Center is a vital food pantry and community resource, providing meals, support, and essential services to individuals and families in need. Being part of an event that directly supports their mission made the evening even more meaningful.

A Menu Crafted for Impact

For the fundraiser, Chef David created a standout seafood presentation that reflected both refinement and generosity in flavor. Guests were served a steel trout zuppa di pesce roulade stuffed with lobster, shrimp, mussels, clams, calamari, roasted tomatoes, and spinach — all brought together in a rich seafood saffron broth. The dish was paired with creamy pea risotto and finished with frizzled leeks for texture and balance.

It was a plate that felt celebratory and thoughtful — layered, beautifully composed, and worthy of the important cause it supported.

Chef David brings this same elevated culinary vision to our New Jersey venues, including Skylands Manor, The Inn at Millrace Pond, and The Great Hall at Monmouth University. Whether serving wedding guests or supporting a community fundraiser, his commitment to quality, presentation, and hospitality never changes.
