Frungillo Caterers’ Caviar & Smoked Trout
on Grappa Cured Lemon

Executive Chef Joanna shares the recipe for the Grappa Cured Lemon Slices layered within our Cavier & Smoked Trout tasting spoons. Note: You will need three days to prepare this unique lemon recipe ... trust us, IT IS WORTH THE WAIT!

Ingredients:
1 dozen lemons
1 tablespoon Kosher salt
2 cups sugar
1 cup grappa

Instructions:
After cutting, be sure to pick out any seeds from the lemon slices. Mix the salt and sugar together. Cover the bottom of a small glass container with a layer of salt/sugar; Layer on one of the sliced lemons, and cover with a layer of the salt/sugar mixture. Repeat this until all the lemon slices are covered. Add 1 cup grappa. Seal the container and leave on the counter for 3 days.

Place salad on top of the cured lemon. Garnish with black caviar and chives. Enjoy!

Andrea and Daniel are just a day away from being wed! Frungillo Caterers is hosting our very first all-Vegan wedding for the couple at The Villa at Mountain Lakes tomorrow. Andrea and her mother, Barbara, came to The Villa earlier this summer to put the final touches on the wedding menu and event coordination.

her daughter Andrea at The Villa

Our Marketing and Social Media Intern Shari Ann Arena captured behind-the-scenes moments from the taste-testing and planning session. Then she sat one-on-one with the Bride-to-Be for an interview. We hope you enjoy following Andrea and Daniel’s story...we’ll share highlights and photographs from their wedding very soon!

Sunset at Skylands Manor
(photo tweeted this summer by @AmandaGorun)

Summertime is winding down (sigh…) and although our blog has been sleepy it’s not due to a lack of great things to share.

All the contrary!

We’ve been busy, busy catering a spectacular wedding season, mentoring interns, designing new delectable menus, winning exciting awards….the list goes on and on. And, we’ve been very active online as well. We revamped our Facebook and Twitter sites and are very happy to announce that we have a new Pinterest page with new inspiration for weddings and other special events.

Stay tuned for future blog posts coming soon to feature highlights from this past season and many more exciting things we are working on for the Fall. And, enjoy the last few Summer sunsets left to go (they truly are gorgeous this time of the year!).
